Not knowing your email I will comment here:

We go to this Indian restaurant near us which has the best basmati rice! Its very aromatic and has a spice I cant identify that is almost sweet but not entirely. Also, it has carmelized [very!] onion shreds, sliced almons, and peas. I was wondering if you had any idea what kind of spicing they do to make the rice so flavorful and aromatic.

[Also they have a wonderful creamy lamb with almond and cashew sauce that if you happened to have ideas for a recipe on would be great!]

    Hi
Another way of best Basmati Rice is to
    1. Heat a little bit of butter or oil
    2. Fry 2-3 of each spices. Spices are cinnamon, cardamom, cloves, bayleaf, star anise. Add water (douible the amount of rice) and let it boil.
    3. Add washed Basmati rice
    4. Stir once or twice whithout breaking the rice.
    5. After 6-7 minutes reduce the heat
    6. Cook in a slow heat until done.
    7. Heat oil / butter in a seperate pan. Golden fry Cashew nuts, Rasins, add sliced onions fry till onion are brown
    8. Garnish the Basmati rice with the brown onions and nuts

    Enjoy

hi suresh, my family and i had a delish indian dinner for my dads birthday including the most fabulous biryani that sounds very similar to what you described in your recipe for basmati, only with chicken. My fiance loved this, it was his first indian meal. do you have any more innovative, fast, easy dishes like this one that I could prepare after work on a week night for him? thanx,
    nina
